Hey there! For being Easter this weekend, I decided to do special cupcakes! I mean, they're just regular vanilla cupcakes with butter frosting but with special decorations!
So before I start with the recipe and all that jazz, I just wanted to wish you a very Happy Easter. :)
OKAY! Onto the recipe!
INGREDIENTS
Frosting:
- 2 cups castor sugar
-1/2 cup butter(room temperature)
-vanilla bean
-2 tablespoons milk
Cakes:
-1/2 cup butter(room temperature
-1/2 cup sugar
-3 eggs
-vanilla bean
-1 tp lemon zest
-1 1/2 cup flour
-1 1/2 tp baking powder
- 1 pinch of salt
-1/4 cup milk
PREPARATION
Mix butter and sugar until the mixture is smooth. Then add eggs, one at a time while mixing it with a mixer. Then slice the vanilla bean and take out the vanilla thingy and add it into the mixture. After that, add your lemon zest and put the bowl aside, just for a moment.
Take another bowl and mix your sifted flour, baking powder and salt.
Mix them well and slowly add the powder mixture into the egg-butter mixture. While mixing the two together slowly add your milk, so you'll get the smooth dough without any lumps. Preheat your oven to 180°C(350°F).
After you're done, line your muffin tray with paper cases and divide your mixture between the cases and bake for 20 minutes(until they're golden)
After they're done, wait for them to cool down and while waiting, why not making your icing!
Put the butter into a bowl with the vanilla.
Beat them together until you get a smooth mixture.
Then slowly add your sugar. When you're halfway done with the sugar, start adding the milk. If you think your frosting is still too thick, add more milk. But slowly, you don't want it to be too watery.
DECORATIONS
Decorate your muffins with icing and... With easter decor! I've bought this yummy Haribo candy and has all sorts of cute shapes like bunnies and chicks. Also, some chocolate eggs and colourful sprinkles! :P
You can get any kind, but my favourite chocolate eggs are these! :)
So, how do you like them? :) I personally think they're super cute :P I'd prefer less sugar in the icing so I gotta keep that in mind for the next time! :)
